Cooking with Your Kids

In many regions of the world, preparing and cooking food is becoming less of a necessity and more of an enjoyable pass-time. In the same sense, cooking with your kids is a great way to have fun and spend quality time together. Further, it is an excellent opportunity to help your kids develop a lifetime of healthy eating habits.
Giving kids opportunities to help choose and prepare their own foods will likely be a welcome responsibility. When cooking with kids, try limiting the selection of ingredients and cooking methods to healthy ones to help them get in the habit of making good food choices. Introducing the USDA’s Pyramid for Kids is a fun way for them to begin learning about nutritious foods and meal planning so they can develop a balanced, healthy diet that meets their individual needs.
We’ve provided a few recipes below using Mat Maid dairy products that your kids should have fun making and eating. If they really enjoy their time in the kitchen and become cooking aficionados, you can help make it even more fun! Maybe they’d like to look the part and get some chef wear or start a cookbook with favorite recipes and culinary creations of their own?
Preparing their own foods and knowing more about what goes into them will help kids become more aware of whether their diets follow USDA nutrition guidelines. Considering the problems with childhood obesity in the USA, helping kids have fun learning about good food choices and healthy ways to prepare them is truly a gift for their lifetime.

FRUIT SMOOTHIE
1 large, ripe banana, sliced
1 cup frozen sliced strawberries, slightly thawed
1 cup sliced frozen peaches, slightly thawed
1 6-oz. container MAT MAID non-fat vanilla yogurt
1 cup MAT MAID fat free milk
Combine the fruits, MAT MAID non-fat vanilla yogurt and MAT MAID fat free milk all ingredients in blender and blend on high until smooth and frothy. Serve immediately.
(If desired, try making the smoothies with different flavors of MAT MAID yogurt, or different frozen fruits, such as raspberries, blueberries or mangos.)
POWER ORANGE SMOOTHIE
2 cups MAT MAID Extra Light 1% milk
1 6-oz. can frozen orange juice concentrate ½ cup sifted powdered sugar
1 teaspoon natural vanilla extract
4 to 6 large ice cubes
In a blender, combine MAT MAID Extra Light 1% milk, orange juice concentrate, powdered sugar and vanilla. Cover and blend until smooth. With the blender running, add ice cubes one at a time through opening in the lid. Blend until smooth and frothy. Serve immediately.

COOKIES AND CREAM SMOOTHIE
1 cup MAT MAID fat free milk
1 cup fat free or low fat frozen chocolate yogurt
2 chocolate cream sandwich cookies, crumbled
In a blender combine MAT MAID fat free milk and frozen yogurt. Cover and blend until smooth. Add cookies to blender and blend briefly, leaving cookies in small pieces. Serve immediately.
CINNAMON APPLE FRENCH TOAST
4 large eggs ½ cup MAT MAID reduced fat 2% milk
1 tablespoon sugar ½ teaspoon vanilla extract
4 ¾ inch thick slices of bread
2 tablespoons unsalted butter
½ cup applesauce, cinnamon flavored
Wisk the eggs in a large bowl.
Add MAT MAID reduced fat 2% milk, sugar and vanilla and whisk to blend. Heat the butter in a large nonstick skillet over medium-low heat. Dip two slices of bread into the egg mixture, turning to make sure both sides are soaked. When the butter it starts to bubble, lay the soaked bread in the pan. Cook, turning once, until the bread is nicely browned and firm to the touch. Serve warm with applesauce.

BUTTERMILK PANCAKES
3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups Mat Maid reduced fat buttermilk
1/2 cup MAT MAID reduced fat 2% milk
3 eggs
1/3 cup melted butter
In a large bowl, combine flour, sugar, baking powder, baking soda and salt. In a separate bowl, beat together MAT MAID buttermilk, MAT MAID reduced fat 2% milk, eggs and melted butter. Blend the milk mixture with the dry ingredients and Heat a lightly oiled griddle or frying pan over medium high heat. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it is blended together. Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. When there are bubbles in the pancake and the edges are slightly dry, flip and brown the other side. Serve hot.
Makes about 12 to 15 pancakes.

MACARONI & CHEESE
2 tablespoons unsalted butter Use current picture for link
2 tablespoons all-purpose flour
1 1/3 cup MAT MAID milk
1 ½ cups shredded cheddar cheese
8 ounces MAT MAID sour cream
½ pound elbow or small shell pasta, cooked to al dente and drained
Salt & pepper to taste
Melt the butter in a medium saucepan. Blend in the flour and gradually add the MAT MAID milk, whisking continuously until sauce thickens, about 5 minutes. Add cheese, and cook while stirring over medium heat until smooth and slightly thickened. Stir in the MAT MAID sour cream, cooked noodles and salt & pepper to taste. Continue cooking over low heat, stirring occasionally, until heated through. Transfer to a baking dish and broil until it is lightly crisp and brown on top. Makes 4 servings.
COCOA
3½ cups MAT MAID reduced fat 2% milk ½ cup Dutch process unsweetened cocoa powder
1 tsp. natural vanilla extract ½ cup sugar
MAT MAID whipping cream, whipped
In a saucepan, bring the MAT MAID reduced fat 2% milk to a low boil. Remove from the heat. Whisk the cocoa and vanilla into the milk. Add the sugar and simmer over medium heat, stirring, until the sugar is dissolved. Remove from the heat. Serve in mugs with a dollop of MAT MAID whipped cream on top. Back to top |
